Yeast and water

1 pkg London Ale III (Wyeast 1318) or a hazy IPA dry yeast (Verdant IPA)
Water Chloride-forward water, about 2:1 chloride to sulfate, for a soft, round mouthfeel.

Process

  1. Mash: 154°F (68°C) for 60 minutes
  2. Boil: 60 minutes
  3. Ferment: 66°F (19°C) for 7 to 10 days
  4. Condition: Dry hop as fermentation slows, then package without letting air in
  5. Carbonate: 2.4 volumes of CO₂

Based on 72% brewhouse efficiency and about 5.5 gal after the boil for a 5 gal batch. Adjust the base malt if your system runs higher or lower. Hops scale in a straight line; larger kettles extract a little more bitterness.

How to brew it

  1. Mash at 154°F (68°C) for 60 minutes.
  2. Boil 60 minutes with the small bittering charge.
  3. Cool the wort to 180°F (82°C) and whirlpool the Citra and Mosaic for 20 minutes.
  4. Chill to 64°F (18°C), oxygenate and pitch. Ferment at 66°F (19°C).
  5. When the gravity is about three quarters of the way down, add the dry hops for 3 days.
  6. Cold crash for a day, then transfer into a CO₂-purged keg without letting air in, and carbonate to about 2.4 volumes.

What’s the difference between a hazy pale ale and a hazy IPA?
