In January we brewed a traditional German Kolsch. In designing the recipe I pulled inspiration from three different sources. Each source advised different specialty malts and percentages, so I averaged it all out. I have typically used Mt Hood hops in previous home brew versions and Fermentis K-97 German Ale. Mt Hood hops weren’t available, so it made sense to use Hallertau Tradition hops.
